I got this Recipe from Steve’s Mem Gill back in 1978 – It’s been a Family & Lodge Favorite Dessert that is easy to make & Very Yummy!!

Ingredients

2 large Eggs, beaten
1 –½ cups Sugar
17 ou. Fruit Cocktail (lg. can), not drained
½ tsp Vanilla
2-¼ Cups Flour
1-1/2 tsp. Baking Soda
½ tsp. Salt
1 cup shredded Coconut
Glaze
½ Cup Butter
¾ Cup Sugar
¼ Cup Evaporated milk
½ tsp. Vanilla
½ Cup Walnuts, chopped

Directions

1. Grease & flour a 15 x 10” Pan, set aside. Preheat oven to 350 degrees.
2. Beat Eggs & Sugar at high speed until light and fluffy. Add in Vanilla & Fruit Cocktail, mix well.
3. In separate bowl, Mix together all Dry ingredients, Flour Baking Soda & Salt. Add to Fruit mixture and mix thoroughly.
4. Pour mixture evenly into your prepared pan. Add 1 cup Coconut on top.
5. Bake in 350 degree Oven for 30-40 minutes, on lower rack of oven, until nicely browned. (can use toothpick test for doneness)
6. In the Meantime, about 10 min. before cake is done, Make Glaze in Saucepan – add Butter, Sugar, evap. Milk, Vanilla & Nuts. Bring to Boil and Boil for 2 minutes. Cool slightly & pour on slightly cooled Cake.

Let Cake Cool on rack, Cut into Squares & Enjoy!!
