Instructions for the Strawberry Mixture
Place half the strawberries in a med. bowl add sugar and vanilla extract. Mix well,
then mash strawberries, leaving some larger pieces. Stir in remaining
strawberries. While making whipped Cream, let Strawberry mixture Blend,
stirring occasionally. (Can be put in Fridge at this point until ready to assemble)
Instructions for the Whipped Cream
Pour Chilled Heavy Cream and Vanilla in mixing bowl of Stand mixer. Beat on
med. high until light & fluffy, and peaks form, do not overmix. (can place in
refrigerator until ready to assemble. If soft, can re-whip)
Assembling the Strawberries & Cream
Add about 1/3 of Strawberry mixture to the whipped cream, swirling it in with a
spatula (do not completely blend)
In 8 serving glasses, Spoon a few of the quartered strawberries in the bottom, top
with some of the Strawberry mixture, then the whipped cream mix. Repeat
another layer of strawberries, strawberry mixture & top with whipped cream mix.
Mix. Top with Strawberry halves & a fresh Mint Leaf. Serve immediately or place
in Fridge to chill until ready to serve. Enjoy!!
